Who wouldn’t love something titled “chipotle-avocado burrito?” It makes my taste buds dance just to read the words.
I confess I was a bit liberal with the title. This recipe is not so much a burrito as it is a tortilla wrapped around some stuff. I know, same difference – but you’re not getting a huge chain restaurant stuffed burrito from this. It is delicious – but it is not a traditional burrito. Oh no it most certainly is not. And in a good way.
First I will liven it up by offering a picture of the chipotle-avocado burrito… thingie. The picture is very small because I couldn’t resist biting into it and then realized half-bitten food is gross, so I tried to make the picture as small as possible. Basically it looks like a little burrito! Maybe I should change the recipe name to chipotle-avocado mini-burrito. Hmm.
1 Trader Joe’s Chipotle-Lime Tortilla
1/2 Zucchini, cut into spears
2 tbsp Trader Joe’s Chipotle Pepper Hummus
1/2 Avocado, sliced or cubed or mashed (or 1/4 large avocado)
1. Spread the hummus onto the tortilla in an even layer.
2. Place (or mash) the avocado in a line across the middle of the tortilla.
3. Layer the zucchini spears lengthwise in a line on top of the avocado.
4. Roll up and eat!
How simple, right? And you wouldn’t think it would taste that good, but it does. The recipe is pretty specific in the ingredients and brand of ingredients, but I think that’s why it is delicious – the combination of the spicy tortilla and spicy hummus really makes this dish. But, if you don’t live near a Trader Joe’s or aren’t a fan of spicy food, put in whatever you have on hand! This is definitely a mix-and-match kind of recipe. It would be great with some spinach leaves or some red peppers. Black beans or cheese would also be a good addition to make it a little more substantial. And they keep pretty well in the fridge individually wrapped in foil. Then I just grab and go!
